My Nopal Salad Started on: November 23, 2011, 2:11 pm |
RCidNovember 23, 2011, 2:19 pm - Really easy. (ingredients in CAPS) First you need to find NOPALES. You have two options: The ones that come in a jar (already peeled and cut and boiled) or the raw ones. Raw ones involve you need to grab a knife and shave (with a knife) the prickles off the skin. Then cut them in stripes and boil them with EPAZOTE and salt. |
RCidNovember 23, 2011, 2:22 pm - Either if you boil them or get them from the jar you need to pour off most of its water with a strainer. |
RCidNovember 23, 2011, 2:36 pm - You need to blend together the following things: An ONION, 2 cloves of GARLIC, 4 sprigs of fresh oregano and 1/4 cup of extra virgin |
RCidNovember 23, 2011, 2:37 pm - OLIVE OIL |
RCidNovember 23, 2011, 2:38 pm - Then you cut 4 TOMATOES in circular slices |
RCidNovember 23, 2011, 2:39 pm - You mix everything together and squeeze 3 LIMES and add 5 spoonfulls of shredded COTIJA CHEESE to it |
RCidNovember 23, 2011, 2:40 pm - If it needs a little bit of salt add it. If you like spicy add some Pickled Jalapenos (without its juice) |
RCidNovember 23, 2011, 2:43 pm - I didn't mention at the beginning how many NOPALES are needed. For this portions you need 3 big jars of Nopales or its equivalent which is around 8 big pieces of fresh cut nopal. |
